Gtano's ~ Gator ~ Tidbits ~ Vegetarian Paella ~ Hooray For Nurses!


Good 35º ice on the barn roof clear morning. Didn't warm up too much yesterday. Windy and cool.
Yesterday Mike got here about 11:30 to weed eat.  I went into Grants Pass for a lab test.... potassium levels. Then to Safeway and the car wash. The line for the car wash was way out to the street, so I passed that up. Potassium levels came back normal. YEAH!
Later I met up with Bill and Jeannie, Dee and Dale, and Kathy to celebrate Cinco de Mayo with a Margarita at Gtanos ....

I had the Peruvian Margarita which is my FAVORITE!!! So good with a hint of spice from the Peruvian yellow pepper.

Tom didn't join us (at the gym) and was missed. The gang ordered quesadilla and Gtano's homemade guacamolé... which is soooooooooooooooooooo good!

We had a good chat. Came home and Mike was finishing up with the weed-eating... along the creek bed and around obstacles that the brush-hog guy, Rick, would hit if he didn't see them.

Dinner was a can of Progresso Southwestern Chicken soup! Was not in the mood to cook and really full from lunch and a couple bites of the guacamolé at cocktail time.
Some interesting tidbits from Brooklyn Vivia:
THE WHOLE NINE YARDS
American fighter planes in WW2 had machine guns that were fed by a belt

BUYING THE FARM

VEGETERIAN PAELLA
(A great side dish for chicken or beef or whatever!)

2 T. olive oil
2 cups chopped onions
2 cups green bell pepper, sliced
2 garlic cloves, minced
3 cups brown rice, uncooked
2 cups vegetable broth
1 cup water
1 t. ground turmeric (if you like it)
1/2 t. dried thyme
2 cups tomatoes, chopped
1 cup peas (or green beans)
1/2 cup olives, chopped
2 T. fresh parsley, chopped (or cilantro)
1/4 t. black pepper
1 (14oz) can artichoke hearts, drained and chopped
DIRECTIONS:
Heat olive oil in stockpot over med-high heat. Add onion, bell peppers, mushrooms, and garlic. Saute for 5-6 min. Stir in rice, broth, water, turmeric, and thyme. Bring to boil. Cover, reduce heat, and simmer 10-15 minutes. Stir in tomato, peas, olives, parsley, pepper, and artichokes. Cook 3-5 minutes, or until rice is tender and mix is heated through.
Serves 6

Oh Goodness!! Thank you for letting us know it's Gator's birthday! Lovely photo of him and June. I especially liked his, what appears to be, pink trimmed sports shoes. Cute!

I enjoyed reading the bio of Tom Bergeron. He is so talented and makes me laugh. Of course I never miss "Dancing".

Your Maggie looked delicious. I made a totally Mexican dinner last night complete with a Maggie for me! :) Oh so good!
