Dinner concoction.... cleaning out the fridge...
I have discovered that I LOVE roasted carrots. I cut some of the small ones in half, tossed them in a bowl with olive oil, salt, and pepper. Roast 400º about 20 minutes.



I cooked this ravioli (Costco) and tasted it. AWFUL! Going against my Scottish heritage... I threw it all out! Don't buy this!!! Get their lobster ravioli! YUMM!!!

I found this tortellini in the cupboard, so cooked it...

Ok, so again with the partially cooked broccoli (with lots of garlic salt!) in a layer, topped with canned drained mushroom slices, and the carrots...

Wanted regular white Alfredo sauce, but only had this... Had never tried it before and it's GOOD!!!

Layered on the cooked tortellini and the Sun Dried Tomato Alfredo...

That all got topped with mozzarella cheese, but unfortunately I left it too long in the oven (275º) and it got crunchy! Still good.

Oh lordy! I am still wiping away the tears after watching the video of hero Norman! So happy he got such recognition to be on the cover of People magazine! Amazing!
