Seafood Salad ~ Dumpster Diving ~ PJ ~ Pretty Horses

Good 55º. Got to 100º here yesterday and supposed to get warmer today. Welcome Summer!

Here is a great summer salad... Seafood Salad from The Frugal Gourmet Jeff Smith. This was one of Jerry's favorites!

2 cups mayonnaise (Best Foods of course!)
1/4 cup sour cream
1/2 cup extra virgin olive oil
2 T. lemon juice
pepper
Mix well.

2 cups shrimp
1-2 cups scallops
2 cups fake crab or fresh squid
Quickly sauté in butter or olive oil and cool
2# muscles - steamed and cooled
chopped sweet onion
grated carrot
chopped bell pepper
1 cup chopped celery
Mix all together. Refrigerate several hours.
You could also add some type of cooked small pasta to this.

Just in case  you hadn't seen this "dumpster diving" video before.. you will enjoy. Thanks Greg Lundell for sending it. One of my favs! Three bear cubs trapped inside dumpster and are rescued by some good people!

Today is my pal PJ's birthday. HAPPY BIRTHDAY PJ!!!!

Another Lynn Helbing blonde man joke:

A blonde man was driving home, drunk as a skunk. Suddenly he has to swerve to avoid a tree, then another, then another.  A cop car pulls him over, so he tells the cop about all the trees in the road.
The cop says, "That's your air freshener swinging about!"

Did some weed-eating yesterday before it got too hot. Lawnmower still won't start. Grrrrrr........ PJ said it could be a fuse. I have no idea how to tell. Then I did, as Patty calls it "domestic goddess" stuff. Dusting and vacuuming. YUCK!

In the afternoon I went over to Bill and Jeannie's. We sat and had wine and chatted. Been awhile. Out there on Upper River Road there is a horse ranch with the prettiest horses...

July! Can you believe it. Wow, Seems like it was just January! Lordy, time goes too fast!

All I know. Happy Tuesday. Nuff said. Ciao.

Loved the bear cubs dumpster diving video. Those were brave folks as it looked as tho the mom was right there. They can be ferocious.
John and I have been watching a show on History Channel about bear hunting up in Alaska. It's so sad. Did you know that the male bears will kill the momma and babies because they are competitors for food!?

HAPPY BIRTHDAY PJ!! Yes we all feel like we know her!

XO Trisha
