Sue's Chicken Picatta ~ Old Boat ~ Bruiser ~ Dude ~ Mint Juleps


Good 43º morning. Looks like for the next week or so the temps will be in the 80ºs.

Lots of bird commotion, so went out and this couple was involved in procreation activities on the fence posts! LOL
That's why I was getting "the look". You are bothering us!


 
I was asked by Sideways Mom, Tammy, about my chicken picatta recipe. Here it is...
My Version of Chicken Picatta - Susan Maxwell

2 boneless skinless chicken breasts
olive oil
3-4 anchovies
1 can quartered drained artichoke hearts
1 cup radiatorre pasta (or small shells or any small pasta) cooked and drained
1 cup fat free sour cream
1/2 cup lemon juice
2 t. capers
1/4 cup white wine
butter
garlic cloves (precooked in boiling water until soft or baked)

Drizzle olive oil in frying pan. Heat to medium. Add anchovies and cook, stirring until anchovies are melted into the oil. Preseason chicken with salt and pepper and dredge in flour. Shake off excess. Add chicken to pan and sauté until browned. Remove to warm plate. Deglaze pan with white wine. Add lemon juice and 2 pats of butter. Stir. Add sour cream, artichoke hearts, pasta, garlic cloves, and capers. Return chicken to pan, put on lid, and heat for 5 minutes.
(FYI, if you have never used anchovies in cooking, they do not leave a salty taste, rather a savory flavor. They melt right into the hot oil. The capers, on the other hand, can leave a very salty taste, so I use them in moderation!)


Brian is interested in the boat up by the pond, so Dude and I went up and took some pictures. Been sitting there forever! Has been in the pond a few times..... trailer has flat tires and the boat probably needs some work. Have a couple of small boat motors  in the barn.


Dude's "dad" came by in his UPS truck yesterday and dropped off a box. Dude happily sniffed his truck inside and out, then Dave gave him a big dog cookie and off he went to the shade to enjoy it! Such a good dog!!!!
He's such a love and so gentle.


Did some errands yesterday and took the Bruise to the vet's for his last tape worm meds. He's been chewing the hair off his tail so got some stuff to wipe on that. A couple of ladies in the waiting room at the vets were so taken with Bruiser. He does have that special look! And those HUGE paws!  

Nothing exciting... dinner was reruns of the turkey meatball mixture and some steamed veggies.... siracha added and some of that salsa ranch sauce. GOOD!

Thank you for the nice visuals to start my day. Interesting read on Jackson's duel - maybe more so than usual because we have some rough campaigning here.

The Spanish hyphenate names - they hyphenate their heritage. From the list of languages he spoke- there is a strong European tradition. Nothing to fret about.

No, I haven't quit. I was on a road trip to So. Cal for my granddaughter's graduation. Will be back with the blog in a day or so. Thanks for the concern. (whoever you are!) xo
