Silly Labs ~ Tamale Casserole ~ Brothers & Sisters



Good 43º clear gonna be hot morning.

Warmed to 89º yesterday. Cloud cover so it was cooler here than at the coast~! I got a little done outside, but the old back was giving me fits from weed-eating Wednesday. I paid bills. Whooppeee. Then I vacuumed off the front porch. Stupid me. Of course the winds came up in the afternoon and blew all that 'stuff' (leaves, blossoms, grass) back onto the porch! It's like that. When I clean it, the wind blows. Like washing my car, then it rains! Sigh.......

 
This will put smiles on your face.... Nothing like a silly lab .... I had one, Yukon, with three legs and nothing stopped him! And he was such a gentle giant and love. ♥

Now I have Dude who is part lab..... just as fun! Another gentle giant and such a love also! ♥ Besides, when he snores it sounds just like Jerry!

Ok, here's an idea in anticipation of Cinco de Mayo...
Tamale Casserole
Anyway, I used a 9x13 pan and 12 tamales. I think 3-6 would work fine, depending on the pan you find to fit them.
12 XLNT tamales (steamed for about 5 min) or use any other tamale of your choice
1 can black beans , rinsed
1 can diced tomatoes with lime, drained
1 can diced green chilies
1 can creamed corn
1 med onion, diced
2-3 cloves garlic, sliced
cilantro
grated cheese
1 can black olives, each cut in half ..or a can of sliced black olives...

I reconstituted the dried sliced garlic in the water I steamed the tamales in.
Unwrap steamed tamales and cut each in half. Line the bottom of the dish with the tamales, meat side up....

Next, mix all the canned goods and add the garlic and cilantro (I used a cap full) and spread half on top of the tamales.

Then add a layer of cheese and start the layers again so you have two layers.
Top with cheese and olives.

Bake covered 350º about 30 minutes, remove foil and bake another 30 minutes (until bubbling throughout)....

Last evening was a busy "phone evening"... Chatted with Jeannie, Jennifer and Mike, Linda, and had a call all the way from S. Carolina from high school mate Georgia (Craig). We blabbed for an hour! Enjoyable. xo

Hi from Las Vegas,

Love the tamale casserole ! And great pictures today. Glad it is not raining for you and it is warming up in LV. Figures ….Going home tomorrow. Here comes summer! It has been real hot there and HB is muggy also. At least Vegas is dry! Ah, welcome summer!

Thanks Miss Bonnie. Our weather here fluctuates between summer, spring, and winter through May.... usually. I never planted my tomatoes until the 1st of June. You turn the heater on in the morning and the AC on in the afternoon! Strange country!!! Have a safe trip back home. xoxo
