Good 31º morning. Everything frozen again. Oh... the geese just showed
up... best go feed them...
Ok, now the geese are happy campers!
What a chore with this computer. After Brian fixed the modem and I got the
blog going, I forgot to tell you I struggled for a couple hours trying to get
AOL and Google Chrome hooked into the modem. I kept getting error messages.
Well, dummy me uninstalled something on the computer yesterday that I didn't
know what it was and shouldn't have deleted it. So, what I finally did was go
back to the control panel and 'restore' the computer to before I deleted the
program. TAAA DAAAA it worked! (Sorry Turk, I didn't know what the "Broadcom"
program was. Never heard of it!) Now all is running ok. Sigh....................
This morning I also had to reinstall the Photoshop and a couple other programs
the "restore" got rid of!
Dinner last night was a chicken pot pie experiment...
Ingredients: cooked chopped chicken (1½ cups), veggies (1½ cups), can of
cream of chicken soup, 10 refrigerator biscuits, precooked bacon, grated
cheese...
The recipe is at http://www.campbellskitchen.com/recipes/mini-chicken-pot-pies-61701?fm=internal_search
I only had a roll of 8 biscuits, not 10. Didn't have any grated cheddar
cheese, so used Parmesan and some cheese slices. Also added in some chopped
bacon. Mix the soup, chicken, veggies (They use frozen mixed veggies .. I used
fresh cut green beans, mini squash, mushrooms, and celery) and bacon.
Spray a
muffin tin with cooking spray. Turn oven on to 350º. Sprinkle flour on cutting
board and separate biscuits and pat them in the flour to spread them out....
Then press them into the bottom and up sides of muffin cups...
Add the chicken mixture, pressing it down into the cups... and top with
cheese...
Since I only had 8 muffins I cooked the rest of the veggie/chicken mixture
in a dish and will mix it with some cooked red rice or quinoa later..
Bake for about 15 minutes, until golden.
These are good and easy, but next time I will add more bacon, grated
cheddar, and probably use cream of mushroom instead of the cream of
chicken.................

Evidently Dude can't read. LOL Funny!
Love seeing the makings of the chicken pot pies. Was 15 mins. in the oven long enough to cook the biscuits?
I read about the variations posted in the comments below the recipe on the site. I will definitely make these. Now tell me, why would you next time add mushroom soup instead of the chicken soup? Curious minds want to know. :)
XO Trisha
No, Dude can't read!!! LOL
The recipe said 15 minutes, but I cook them longer as we are at 1200 feet and it just takes longer. I like cream of mushroom better than the cream of chicken... more flavor. Next time I'd also make the biscuits thinner ... or use bigger muffin tins. xo
I always use cream of mushroom soup instead of the cream of chicken in their recipes, like the flavor better (and the mushrooms).
Hey, we both used the telegram for baby news :) I sent one to Spence, who was on Westpack on the Manatee, telling him we had healthy, screaming baby boy. That was on August 8th 1962. We still have that faded old scrap of paper.
I see that Dee's present did a lot of good. I'm only surprised that Dude didn't rest his head on it. Jake loves putting his head on pillows. Oh, yes let's join the chorus of Obama & the media that it is Bush's fault. Looking forward to the picture of him on that very pillow :)
Thanks for the chocolate bundt cake recipe! Will buy the ingredients this week and make that cake. Erika
I enjoy your blog!
I am so glad you do, Anonymous!
Just got my computer up and running, again. I read your blog daily. Like the news and your ingenious meals. Look forward everyday to read your news.
