Rotating Head ~ Affordable Acts ~ Chicken Tortilla Soup



Good 23º yes, everything is frozen again morning. The sun will come up over the mountain about 8:50 and thaw us out and warm us up.

I made a chicken tortilla soup that came out fabulous!
Ingredients: rotisserie chicken, onion, garlic head, bell peppers or small sweet peppers, butter, Rotel tomatoes with chilis, chopped green chilis, diced fire roasted tomatoes, white beans, pinto beans, chicken stock, 1 Lawrys Taco seasoning packet, chicken stock (1½ cartons), 10 corn tortillas, tortilla chips, about 8 oz. grated cheese, ½ - 1 cup whipping cream.  

Sauté the garlic, onion, and peppers in butter (1 cube) until tender. Drain the tomatoes, chilis, beans, and Rotel. Shred chicken. Cut tortillas into small pieces. Add all ingredients to crockpot ...except cheese, tortilla chips, and cream. Turn on low for about 5 hours.

Before ready to eat, add in cheese and cream. Cook for another 10 minutes. Ladle into bowls, top with crushed tortilla chips and some shredded cheese.
I didn't put crushed chips on mine, just more cheese. AWEOSMELY GOOD!!!!

Now if it so moves you, you can also add diced celery and carrots and 1 t. garlic powder instead of the fresh garlic.

Alton Brown's sardine/avocado sandwich. Wow! I have both avocados and sardines. Sounds like a plan.... along with a dirty martini!

That sardine sandwich doesn't float my boat but your soup sure does! OMG how delicious is that! Girl you will be eating soup for days! YUM!!

Eric and the twins had to do a model of a mission and we chose the San Gab one. Dad made it from styro and even had little trees arund it. It was perfect! We kept it from Eric to the twins for when they got to 4th grade. They also had to do a handwritten notebook on the mission. We included photos from when we took them there to visit it. John also made a flour and water relief map of Calif. for extra credit. Of course the boys helped dad! LOL
Elementary school was sooooo much work and homework compared to the rest of the school years. John and I always said we had been thru elem. school five times because of all the help we gave them!

I really think sardine's populatiry goes back a few generations. My folks always served them with saltine crackers when we had company. I grew up liking them.

T, you and John did good. Many many parents don't get involved. Sad. xo

Sue, my aunt and mother always served sardines with crackers too. I liked them that way but don't think I would like them on a sandwich.

Yes, you are right about so many parents. Debbie says her students get no help at home. That is vety sad because they are special ed and really do need the help.

got caught up on 2 days of the blog sue. never saw that video you got from trisha before, it was sure cute. wow, scott beamer's birthday would have been today! yep, 'hero' is sure right. he was a great Christian man and i guess his wife gives speeches about him and their life at churches and for political thing i've heard, too. couldn't agree with you more about miley cyrus. if i was billy ray, i spank the crap out of her even if she's a so called adult. of course, at that age, he wasn't exactly a role model, either. judy

I think most people our age agree about the Cyrus family. It's the teens who adore her for her unconventional acting up. xo

Finally a day I can pass up- no sardines!

Tortilla soup is so easy to make at home- should do it more often.

I hope Ms Cyrus gets a chance to grow up. Fame and fortune are a pair of promiscuous partners to depend upon. Her parents- I imagine we don't know what is said when the cameras aren't rolling.
