Irony ~ Hong Kong Apartments ~ Sue's Mac & Cheese


Good 53º clear and sunny morning. Temperature tipped out at 98º yesterday. Gonna do the same or worse today.


I can't believe this Zimmerman thing. He's acquitted and now the federal government is going to step in and the DOJ will determine if he violated the punk's civil rights! Geeeeze Louise. Insanity reigns supreme in DC!
 
And if that wasn't enough... the Korean air line is going to sue over the silly names the pilots were given by a San Francisco TV station! Ho Lee Fuk!

 

....and from Gator... religious irony? "all this bloody fuss about covering their heads" !! Good Lord!

I sent this recipe to my friend Erika yesterday but then thought I'd share it with all of you. Macaroni and cheese, easy, awesomely good! I have been making this for a good number of years.... loved by everyone who tries it!

Sue's Country Baked Macaroni & Cheese
 
1¾ cup elbow macaroni (8 oz by weight)
Brummel & Brown Spread with Yogurt (or use regular margarine... I just like the B&B one! OR use butter!)
3-4 cups grated cheddar cheese
2 eggs
1 cup milk
salt/pepper
Cayenne pepper
Mrs. Dash
2 pieces sourdough bread
 
Cook macaroni 8-10 minutes in boiling salted water. Drain and while still hot put into large bowl with 2-4 tablespoons of margarine. Mix until all the margarine is melted. Add the cheese and mix. Put mixture into 2 quart casserole dish that has been sprayed with Pam. Beat the eggs and add milk and seasonings. Pour over macaroni mixture. Top with more grated cheese.
 
Pulse the bread slices in the food processor with the blade attachment. Run processor until the bread is in fine crumbs. Add about 3 tablespoons of margarine and pulse until well blended. Sprinkle on top of cheese. Bake 350º until crumbs start to brown and cheese is melted... about 50 minutes.
 
Additions if you like .... 1 can chopped green chilies, cooked broccoli, cut up cooked hot dogs, cubed ham, sliced green olives, diced tomatoes, Swiss cheese, mozzarella cheese, sliced jalapeños, Tabasco, oysters, cooked sausage, basil leaves, mustard.... use your imagination~!

I have had that mac and cheese recipe of yours in my notebook for a long time. Just haven't tried it yet.

John knew Pat Wayne at Loyola High but he was several grades ahead of John.

For cow appreciation day maybe we need to have a steak tonight for dinner? :)
