Won Ton Taquitos ~ Clown Makes Us Proud ~ Sons of Maxwell ~ OJ and Hoagies


Good sunny clear 40º morning. The weatherman said to expect rain/thundershowers today. ?? Wunderground weather just says it will be in the 90ºs tomorrow and partly cloudy all week and cooling to the 70º-80ºs til Wednesday.



So, last night I celebrated Trés de Mayo with baked taquitos ... made with won ton wrappers. First I mixed the drained chicken with salsa and grated cheese. Lay out the wrapper and spread the mixture then roll up. Bake them in a 375º oven for about 15 minutes.

Spray the cookie sheet with cooking spray or use a baking mat.


The dip was avocado, salsa, cumin, salt, pepper, and a dollop of sour cream.
Pretty darned good, and lower in calories than a tortilla.....

BUT you can't call this a Mexican dish, it would have to be Asiacan. BTW.... leftovers for breakfast were awesome!

 

Tonight I'm going to experiment basically the same, but with tortillas. Finding a way to eat them without frying them is interesting. So, tonight's dinner will be celebrating Cuatro de Mayo!

Yesterday was the mammo thing, then a trip to Costco. Back to RR and dropped off the old vacuum cleaner to Leah for her friend. Ace for box cutter. Post Office to mail a letter and finally the pharmacy for prescription. Home to happy dogs and a cat who was mad he had to be in the house with the dogs! He took off and didn't come home last night.   :o(


All I know. Tucker was sick last weekend, then Sami came down with basically the same thing and then Brian got it. Trying to find out if Jen is ok and taking Tucker to his baseball game today. Don't know yet. Happy Saturday. Ciao.

Your Asian taquitos look amazing! Great they are baked instead of fried. Why does everything fried have to taste so good! :(

Love it that you posted the Moochele pic! It will no doubt tick off some but then who cares, right?

Love it that you give us the scoop on historical events early in the day. When I watch Shep Smith on Fox (before O'Reilly) he tells about something that happened so many years ago on that day. I chuckle and think "Sue told us that this morning"! lol

Hope Mr. Bruse gets home soon with no health issues!!

Sue,
When I bake something that general tastes better fried I spray the foil lined pan with Canola spray from Trader Joe's. While the food is in the pan I then spray the top of whatever I am baking with spray. Still not as good as fried but it crisps the top. I do it with sweet potato fries and potatoes. Even hubbard squash is pretty good that way. And it saves a ton of calories. Hope my suggestion helps.
