Chicken Roll-ups ~ Cherry Dump ~ Joan&Teresa ~ Margaritaville !


Good morning. 34º, low clouds.

Today is Washington's birthday. It's is also the day Brian was due to make his debut into the world, but I think the earthquake on February 9th, 1971, made him decide to make his entrance earlier on the 14th!

Still pretty much on a blog vacation but thought some of you might like this creation I made for dinner ..... Ingredients were pounded flat chicken breast halves, turkey bacon, cherries (originally calls for dried cherries, snipped, but didn't have any so used a few of the cherries out of a can of cherry pie filling), honey mustard, Panko crumbs, cooking spray. Cook bacon, not too crisp. Flatten the chicken between two pieces of plastic wrap, lay bacon on top, mix cherries with a couple T of honey mustard and slather over bacon.




Roll the chicken up, tucking in the sides and ends. Brush with honey mustard and roll in Panko crumbs. Spray cooking pan with spray, set chicken rolls in pan, spray chicken with cooking spray. Bake 350º about 45 minutes.


 

With the rest of the cherry pie filling, in honor of Cherry Pie Day, I put it in a pie plate, added a can of crushed pineapple, sprinkled about half a package of lemon cake mix over the top, melted a cube of butter and drizzled that on top. Baked 350º about 45 minutes.


 
The last thing I did was halve an avocado, cut up a tomato, mix the tomato with mayonnaise, garlic powder, and red onion. I filled the avocado half with the tomato mixture.
 
Slice the chicken, put a handful of baby spinach in the dish, drizzle on olive oil and some pomegranate balsamic vinegar, a pinch of salt and pepper, set the chicken on top and it was OMGOOD!!!!!

Today is my friend Joan Knoeppel's birthday. I got to know Joan at my vet's office. She's one of those neat ladies who love your pets like you do. She has a twin sister, Teresa, and together they are celebrating this infamous day. I got to meet Teresa this past month. HAPPY BIRTHDAY LADIES!!!
