Aging Vets Info ~ David Flores ~ Mexican Stir Fry Dinner


Good 46º very foggy morning. Yesterday it seemed to rain most of the day. We ended up with about 2/3"

Sunday football was wild. The 'Lambs' and the 49ers tied 24-24. (Sorry Jeannie!) Bears lost to Texans 13-6. (Sorry Santistevens!) Seahawks womped the Jets 28-7 (Sorry Kristen ... Olga!)
LOL NY Giants losers to Bengals 13-31. My Patriots over Buffalo Bills 37-31 (sorry Billy boy! Not.) Colts over Jaguars 27-10 (Brian, looks like Luck really is on your side!!)

 
Had a nice snuggy fire, and put a soot remover stick in there... that is where the blue flames come from...

Here is some information I just received from Moon Mullen... for vets...
Here’s a riddle: When is a government benefit that pays for caregivers, assisted living and a nursing home not a benefit? When hardly any people know they're entitled to it.

That seems to be the story with a Department of Veterans Affairs benefit called the Aid and Attendance and Housebound Improved Pension benefit, known as A&A, which can cover the costs of caregivers in the home
(including sons and daughters who are paid to be caregivers, though not spouses) or be used for assisted living or a nursing home.

The benefit is not insignificant: up to $2,019 monthly for a veteran and spouse, and up to $1,094 for the widow of a veteran.

Dinner was an experiment. I cooked some of the "Mexican" infused Uncle Ben's rice in the rice cooker. In a frying pan I added olive oil, broccoli slaw, shrimp, peas, and grape tomatoes. I reconstituted some dried mushrooms and added those. Stir-fried everything.

Then I drizzled some Pico Pica hot sauce over all, added 3 big dollops of sour cream, and stirred it all together.





I plated some rice, added some shredded cheese and topped it with the shrimp mixture. OMGOOOOOOD!!!!!

Drooling now thinking about dinner. All I know. Nuff said. Happy Tuesday. Well, maybe. Probably not. My washing machine took a dive yesterday (the gears were spinning but the tub wasn't. AWFUL smell!) so will go to Sears today. The machine is 14 years old. Ugh.

 
And, Bruiser was on his bed at 1am when Maggie went out but not there this morning. Then he came back. I'm taking him to the vets today! His eye looks bad and he's not eating. Worry worry worry.......

I've never seen the Mexican Infused rice before! I hope I can find it here even though I can't have the shrimp.

My memory needs refreshing regarding the Rambo Brothers- googling them right away.

I hope Bruiser is okay- keep us updated. My boys were soooo happy to see me! They missed their Mama. Jaco and Sides! Love- Tammy

Tammy, can you have the fake crab? It's great in stir fry. Or use chicken tenders.

The Vets benefits are difficult to access. It took close to 2 years to get my mother's. However, once in, the VA was very good. Except the back check due her was issued the day she died- and it was stopped. Even though it was for benefits she waited for when living. Their mistake- the consequences to her estate.
