Plumber Mike ~ Couscous Tuna Cakes ~ Summer Solstice


Good 43º clear sunny morning. Will hit 90º and cool off with chance of rain on the weekend.

 
Today my granddog, Atlas, arrives for a stay for a week while his mom and dad and family go to Legoland.

Yesterday 'Mike the Plumber' was here. I needed a new filter in the pump house wayyyyyy up in the pasture.. and he found a leak in a relief valve. All fixed now!



And when Mike isn't doing the plumbing bit, he's doing his favorite thing:
Great guy. Great plumber!


Since yesterday was "martini day" I didn't go with the 'traditional' martini, made mine dirty....

Dinner was another experiment. Since the 'omelette muffins' were such a success I thought about another muffin pan something but ended up making 'Couscous Tuna Cakes' which were VERY good!
Cook the couscous per directions (1½ cups water to boil, add seasoning, add couscous, take off heat, let sit 8 min, stir) Then.... drain two 6oz cans of tuna (I had some of Patty and Cliff's albacore that is awesome!) and flake, add two eggs, chopped parsley, a couple of green onions chopped, 2 cloves garlic minced, 3 T mayonnaise, and the juice of a lemon. Mix well, add 1 cup of the cooked couscous. With your hands shape into patties. Place on (greased or sprayed with Pam) cookie sheet. Bake 400º for 20-25 minutes. (I'm at 1200 feet and baking takes about 5-10 minutes longer)
Then I mixed some 'olive oil & cracked pepper' mayo (I am a die hard Best Foods fan, but this is really really good and VERY peppery!) and some lemon juice and drizzled that over the tuna cakes when I served them.
I made more of the muffin omelettes to go with!
Today I will have a tuna cake or two on a 100 calorie wheat bread bun.
