~ Mr. Raccoon! ~ Mr. Vulture ~ Edda's Mexican Chicken



Good 45º and at 5am it started raining morning. There is no radar and looks like a tad had just passed through... supposed to be 73º and sunny today. Hmmm... but at the moment it's raining on 'my mountain' !


I was awakened by a buzzing sound. Apparently 'something' pushed the reverse button on my golf cart, right on the front of the seat. ??? Went out, turned it off, took flashlight and looked around and what did I see??
 
Ah ha! So............Mr. R has been eating the food in the bed of the golf cart I put out for Casper! Cute little booger!


 
 
 

Yesterday I took that picture of the turkey vulture out in my pasture. Finally he left his perch and was flying around. Apparently there is something dead out there as he keeps circling and even landed in the grass for a time... don't know what he is doing here, "gather around my children..."


Looks like he's drooling....

Dinner was one of my friend Edda's recipes.... simple. Just 4 ingredients.

Chicken (Edda likes bone in, skin on. I used some boneless skinless breasts I had in the freezer)

Garlic (E uses 6 cloves chopped, I used the whole head)

1 can Las Palmas enchilada sauce (I used La Victoria...1 because it was in Temple's patrol area in Rosemead and they make good stuff! Factory was at Rosemead/Garvey but looking at Google Earth it doesn't appear to be a working factory any more.)

Lawry's Garlic Salt (I used McCormick garlic powder with parsley and some sea salt)





I put the garlic powder and sea salt in a bowl and pressed it into the chicken....


Put some of the sauce in the bottom of the crockpot, add some chopped garlic.
 

Add the chicken and pour on the rest of the sauce and add the rest of the garlic. Cook on high 4 hours (I cooked these large pieces for 5 hours) and low for an hour. Serve on your favorite rice (regular white, brown, or Spanish)

....OK, so I have to say Edda, THIS IS FABULOUS CHICKEN!!!! OMG it is soooooooooooooooooo good. It was so tender and juicy!!!!!!! I heated a spinach wrap in the micro for about 12 seconds, put lettuce on the wrap, added pulled apart chicken, and cheese and wrapped it up!

It needed NOTHING else. It was perfect just this way!

Thanks E! Going to make chicken this way again , SOON, and may use the green enchilada sauce next time!


It was cool all day yesterday and so the 'kids' and I had a fire.... Maggs had a 'chew' to keep her busy and happy....



Harley made himself comfy in "my chair" !

Loved what you did with the recipe, and your pics are awesome. One wee can of enchilada sauce is a must for my pantry...has been for a long time. It also works in crock with chunks of pork with some fat that I use to make Carnitas. The red sauce works well with a chuck roast that I shred for taquitos, enchiladas and tacos. I forgot to tell you I got taquitos all ready to fry...were filled with gr. beef taco meat and ended up rolling them in green enchilada sauce...made more enchiladas with them....used larger can of sauce...put sauce layer in bottom of 9x13 pan, layerof sliced olives, sliced green onions, some Mexican shredded cheese...laid them down on that, poured more sauce, then another layer of green onions, sliced olives, and a thick layer of shredded cheese...finish with the rest of the sauce.The green sauce has an amazing flavor....I'm going to try you experiment with the basic recipe SOON as well. :)
