Southwest Salad w/ Taco Dressing ~ New TV ~ Don Lee's Veggie Meatballs ~ Dr. Brian ~ Pretzel Day

Good 45º raining morning. Since last night 1/4". Sounded steady all night. Was going to have Jason come up and help with the deadfall .... and weed-eating, but too wet.



.... Mr. Jake was standing on the fence shaking off the rain..


 
Ok, now this is good.... 
Southwest Salad with Taco Dressing
Dressing:
3/4 c yogurt     1/2 cup buttermilk     1/4 cup mayonnaise
1/2 t. salt        1/2 t. garlic powder    3/4 t. chili powder
1/4 t. cumin     1/8 t. cayenne pepper

Tortilla crisps:
6 small corn tortillas non stick spray dash salt
 
Salad:
1 head iceberg lettuce     1 can black beans     1 lg. tomato
1½ cup frozen corn kernels               1 bunch green onions
1½ cups shredded cheese

Preheat oven to 400º. Use a pizza cutter to cut tortillas into thin strips. Line a baking sheet with foil and coat it with the cooking spray. Spread the tortilla strips in a single layer and lightly spray with cooking spray. Sprinkle with salt. Bake for 15-20 min until golden and crispy. Stir the strips around half way through cooking.

Cut the head of lettuce into small pieces, rinse well & drain or use a salad spinner. Chop tomato, onions, and rinse & drain black beans. Thaw corn.

Whisk all dressing ingredients. Once tortilla strips are finished baking, add all the salad ingredients, either in individual portions or one big salad. Layer lettuce first then beans, corn, tomato, shredded cheese, green onions, and a few strips on top.




 
Yesterday was another trip to Medford..... Costco. Didn't go to Food 4 Less as I spent too much already. Got a new Samsung 32" HD TV for the dining room. The one in there died. Now I have to find some burly men to move out the old one. The new one I can carry. Old one is 15 years old and .... well, you know.

I also got some goodies... fresh creamy goat cheese, habañero & pepper jack smoked chicken sausages, asparagus & gruyere ravioli, and mozzarella & fresh veggie 'meatballs'. These meatless meatballs are WONDERFUL. 1 min in the microwave. Made by Don Lee Farms in Inglewood. www.donleefarms.com 
 
With marinara sauce or as a finger food snack or in a bun as a meatball sandwich. I'm addicted!!


I was driving by the Rogue Valley Hospital and there in front is a sign with my doctor's picture! Dr. Brian Morrison!!! I pulled into the lot across the street to get a picture and there is a catering truck making Thai food, barbecued, and I don't know what all. The men were by the barbecue cooking and I said hello. Told them I was going to take a picture of my doctor on the sign. They know him, as he stops there often for lunch! Going to have to try their food one of these days~

 
I told them Dr. Brian does a commercial for 'heart health' and is playing basketball wearing black tennis shoes and BLACK sox! I told them I teased him. They said also have ribbed him about the black sox!

It rained here last night too! Slow and steady.
OMG I LOVE the taco salad pics! It's one of my favs. Of course I like it with beef or ckn in it.

Girl, just how old is your doctor anyway? He looks like a kid! Cutie for sure!!

@ T, Dr. Brian is 51. Born the same month as my Brian! He is a cutie, you are right. Soooo nice and caring.

That salad dressing is great. I use Greek yogurt. And my friend and your friend, GS, puts chipotle in hers. xo
