Caramel Macchiato ~ Spinach Shrimp & Pasta Soup ~ Brain Test ~ Joe Day

Good 42º rainy morning.
Just drizzling now.


Yesterday I left here and straight to the hospital lab in Grants Pass. Had my fasting blood test (routine, once a year) and then enjoyed a caramel macchiato* from the coffee lady and a little package of sliced apples, grapes, and tiny cheese squares. After not eating since before bed last night, I was HUNGRY!

* 1 cup steamed low fat milk with 2-3 oz caramel flavoring. Temp should be 160º. Set aside. Make espresso coffee and pour coffee over frothy steamed milk. OMGSG!

Then after the visit with Dracula (actually she was sweet and nice) I stopped in Brian's office. Sandra said the kitten (was Pesto now Tia) is a love but very vocal. Then to see Turk and take him my old computer. He will selvage parts. He puts computers together for kids who can't afford them. Then to the recycle place to take my old printer, but they weren't open. Next trip to town...................... Home to Rogue River and a visit to Rays for a whole roasting chicken, a skinless/boneless chicken breast, raw shrimp, baby spinach, and tomatoes, lettuce, leeks, green onions, and asparagus. Gonna do some cookin' this week!

Chicken went in crockpot with garlic powder and paprika on top. Then the good smells started! Dinner was, in honor of National Spinach Day, soup.... like the recipe on yesterday's blog ... only with minor changes...

Into the pot went the chicken broth, cut up green onions, smashed garlic cloves, basil, and the dried mushrooms. After the broth heated I added 4 cups of water and 4 spoons of organic 'Better Than Bouillon' chicken base.
..... it's low in sodium and adds a great flavor. That heated to a gentle boil I added the raviolini. When the pasta was done I added the peeled shrimp and baby spinach.

This was soooooooooooooo good!

Today a dear friend, Gar Austin (LASD), will be undergoing aortic valve replacement. He's in my thoughts and prayers.
And..... just heard that Charlie Tharp, Mr. Temple City, will be getting married soon. OMG, go Charlie! Congratulations! All the best to you and your bride~!

National Joe Day is a chance to change your name, if only for today.
Many people do not like their given name. They wish they could change it. A few actually do. On National Joe Day, it is perfectly okay to have everyone call your "Joe".
