Coyote & Turkeys ~ Football ~ Vegetable Lasagna


Good same old same old .... yadda yadda yadda... 27º icy and foggy. Broken record. I WANT sunshine!

Yesterday in football was interesting. Sorry about the Jets Kristen. Yeah for the Dolphins Alex! Ha ha re the Giants. OMG re the Colts first win and the Packers first loss! YEAH Patriots!


The turkeys hung out...


And I was watching a coyote wayyyyyy up in the pasture.. he/she was watching also....


The sunset was pretty............

Also saw another fun movie.... the original Santa Claus with Tim Allen. Love that movie. Then watched Santa Claus 3: The Escape Claus with Tim and Martin Short as Jack Frost. Just fun!

 
Dinner was vegetable lasagna....
I re-hydrated mushrooms in white wine and herbs, cut up red and yellow bell pepper and sauteed that Cut up eggplant, tomatoes, and yellow squash. Sauteéd asparagus and boiled some cut up carrots.


I sauteéd cubed eggplant with elephant garlic slices...

Then the layering... first some Alfredo sauce... then Trader Joe's non cook lasagna noodles...then some of my marinara sauce...


Added carrots, asparagus, mushrooms, bell peppers, eggplant... more Alfredo sauce... then tomatoes and more marinara sauce....



Another layer of noodles and ...
then I mixed a package of frozen/thawed spinach with 2 cups of ricotta cheese, half a cup of parmesan cheese and two eggs and added that. Topped it with grated mozzarella and baked 45 minutes at 375º.

Oh my....... GOOD!

OMG Sue! What a heavenly looking dish! I assume you freeze some of it until later. What a big dish full!! The colors are amazing! So healthy looking!
