Labor Day ~ Super Simple Broccoli Cheese Pie ~


 


 
 
 
Good 55º morning. We "may" get thunderboomers today. Yesterday hit 102º and by 8pm it was still 75º. Doesn't look like any changes for this week. The pollen count here is 6.2 out of 12.

Yesterday was catch up day ... laundry, thank you notes, watering, and a tiny bit of cooking. I did make this super simple easy yummy Chicken and Broccoli Pie:






 
 
 
 
 
 
 
 
 
 
 

Recipe:

1 9oz box frozen broccoli cuts, thawed and drained. (I used 10 oz of fresh broccoli, cut up, and quickly steamed with salt, lid off so stays green, just until al denté, drained)

1½ cups shredded cheddar cheese

1 cup cut up chicken or 1 can (or 1 can - 12oz - Kirkland chicken, drained)

Finely diced onion .. or not, I used a bit of red onion

½ cup Bisquick Original

1 cup milk (didn't have regular so used buttermilk)

½ t. salt

¼ t. pepper

2 eggs

 
Preheat oven to 400º. Spray 9" glass or ceramic pie plate with cooking spray (or use a 9x9 pyrex dish). Add broccoli, 1 cup of the cheese, the chicken, and onion.

In med bowl mix the Bisquick, milk, salt, pepper, and eggs with a whisk or fork until blended. Pour over pie ingredients.

Bake 35 minutes (or until knife inserted in center comes out clean (here I baked it 38 minutes..perfect). Sprinkle on the rest of the cheese and bake another 2 minutes. Let stand 5 minutes before serving. GOOD!!!!!
 

 
 
 
 
 

 
 
 
 
 
 
 
I always make a recipe as close to original the first time. I think next time I'll add some slices of jalapeño instead of the onion. And it needs slices of garlic!

All I know. Just had a scare, keyboard quit functioning and just by dumb luck I had 2 AAA batteries secreted away! (Those are on my Costco list now!) Whew. Ciao. Happy Labor Day!

OH YUM! Oh that recipe looks and sounds so wonderful! I would add jalapenos too. Drat that John won't eat broccoli! Is there enough chicken in that can to fill up that pie or could you add two? Being the mom who had to cook for five men I am always thinking like that.
Isn't Rachael Welsh still so beautiful? I saw her on Huckabee a while back and she said she has had no "work" done. Amazing!!
We had lightening and rain last night and this morning but today will be in the high 90's. Humidity time!!

T, substitute something else for the broccoli... and use two cans of the chicken... for example you could use
semi cooked carrots, green beans, squash, red potatoes, artichoke hearts, mushrooms.... use your imagination.
You got the lightening and rain drops that we were supposed to get!

Yumm-EE. The casserole looks like something to wrap in tinfoil and cook over a campfire.
