Good 59º morning.

       
Yesterday it started off so nice and cool. Did more watering. Then about 11:30 the temp rose to 87º, at 12:30 it was 94º, and by 3:15 it was 105º! Then by 3:30 it went down to 104º where it stayed for a couple hours and then did a slow decline. I did NOTHING but stayed inside and cool. Well, I did wash dishes and some towels. Then it was Hallmark movie time.


Yesterday was a very special day... Rick (LACO Fire Capt. Catalina Island ret. and Temple City High grad!) and Wendy Harp celebrated their 55th Wedding Anniversary. Congratulations kids!!!

I got this photo from one of my "sons", Jim Forbus (Wahsoe Co Sheriff, ret). He and Dawn had dinner with another one of my "sons", Scott Edson (LASD ret) and Bill Stonich (LASD ret) at a LE Conference in Reno.


I love the recipes on Mr. Food Test Kitchen. Howard makes the BEST stuff. How about easy yummy Chicken Egg Rolls...



I was watching Carnival Eats last night and at an Oregon carnival this vendor made a Marion Berry (native to Oregon) cream cheese mixture, put it in egg roll wrappers, deep fried it, and topped it with drizzled Marion Berry sauce. OMGOSH did those look good. Everyone who tried them were gushing at how awesome they were. Here is a similar recipe:


Later in the afternoon I made a cabbage salad to go with my dinner. I wanted something cool. Chopped cabbage and celery and added in some (Schwans) green beans.

Made a dressing of BF Mayo and lemon juice.... Mmmmm.... and sprinkled on White and Black Magic. These are awesome spices told to me by pal Gator, down in Florida. You can only buy these in the South, but you can mail order them from their website:

Then for the main course I got out some of Schwans Beer Batterd Alaska Cod. It said to heat the oven to 425º and bake it. Not. Too hot to turn on the oven, so I cooked the cod in my Air Fryer at 400º for 13 minutes with a drizzle of olive oil. PERFECT!!!!


Because of the heat I didn't see any critters out and about. I do know they show up here and drink water fromt he tubs in the back, but probably after dark.

It's a day to enjoy some tasty, fried catfish. Or, enjoy catfish cooked to your favorite recipe......yummy.
Guess who said: "More and more Americans are discovering a uniquely American food delicacy -- farm-raised catfish." For the  author, read on below to the "Origin of National Catfish Day".
You should have no doubt what to do today. Enjoy a plateful of catfish, cooked anyway you want. Chances are, you will eat farm raised catfish, which supplies the vast majority of catfish to the U.S. market. But, wouldn't it be much more fun to fish in the morning, and catch the catfish you will eat?
