Flag Down/Roof Up! ~ Wild Turkeys ~ Nature of God Video ~ Crockpot Chicken Enchilada Casserole ~ Pigs In A Blanket

Good 44º cloudy drizzly morning.

This I like!!

So, the Toms are out parading ... and between March and May it's mating season. These have got to be some of the dumbest animals I have ever seen.... they pace in front of a fence and have no clue they can fly over it. Then this time of year the Toms are trying to be attractive to the hens, but duh........ Hey Tom, that's a Jake! (A Jake is a young male...)

The wild turkey population here in Ory-gun was depleted years ago so turkeys were brought in from Texas.

Here is a soothing and lovely 4 minute video you might enjoy. I did. Pour a cup of coffee or a glass of wine and sit back. Thanks Mike Cippola for sharing.

Later dinner was a rerun of the yummo pizza, wine, chair, and TV.

Ok, you like enchiladas? How about an enchilada casserole? This one is super and easy.....
Crockpot Chicken Enchilada Casserole:

2 cans (4.25 oz. each) chopped green chiles (mild or hot)
1 can (10 3/4 oz) condensed cream of chicken soup
1 can (10 oz) Old El Paso green enchilada sauce (or your favorite)
1/4 cup mayonnaise
12 6" corn tortillas, cut into 3/4" strips
3 cups shredded cooked chicken (use a store pre-cooked rotisserie chicken)
1 can (15 oz) black beans, drained and rinsed
2 cups (8 oz) shredded Mexican cheese blend
2 large tomatoes, chopped, about 2 cups
(or a can of drained diced tomatoes with chiles)
2 cups chopped lettuce
1/2 cup sour cream
1. Spray 3-4 quart slow cooker with cooking spray. In cooker spread 1 can of green chiles. In bowl, mix remaining can of chiles, soup, enchilada sauce, and mayonnaise.
2. Arrange 1/3 of the tortilla strips over the chiles in the cooker. Top with 1 cup of the chicken, 1/2 cup of the beans, 1/2 cup of the cheese, and 1 cup of the enchilada sauce mixture. Spread to the edges to completely cover the tortilla strips. Repeat layers, reserving the last 1/2 cup of cheese.
3. Cover and cook on low for 7 hours.
4. Top with remaining 1/2 cup of cheese. Cover, cook 5 minutes longer until cheese melts. Serve with tomatoes, lettuce, and sour cream.

All I know. Nuff said. Happy Monday. Ciao.
