Moon ~ Pasta Salad ~ Vanette Christensen ~ Poles & Holes ~ Articulate 11 Year Old ~ Potato Chips




Good 44º VERY foggy morning. UGH. Yesterday we topped out at 66º late afternoon. It was so comfy then. Nice!


Pasta salad.... OMGOOD!!!

1 12oz pkg tricolor spiral pasta
4 cups broccoli florets
1 pint grape tomatoes
1 6oz can ripe pitted olives, drained
salt and pepper to taste
1½ cups Italian Salad dressing or your favorite..... I mix olive oil, some lemon juice, and mayonnaise.
When I have it I also like to add in some diced up avocado.
1. Cook pasta according to package directions. Add in broccoli florets the last 2 minutes of cooking. Drain.
2. Transfer pasta to large bowl, adding in olives and tomatoes and salt and pepper. Drizzle with salad dressing and toss to coat. Refrigerate til serving.

Sadly, Lee Petty passed away on April 5, 2000 and Adam died tragically about a month later in a racing incident when he was practicing with a Busch series car at New Hampshire Motor Speedway.

Racing was in their blood right on down the line from Lee.

Later dinner was the last of the left over roasted veggies heated in the Air Fryer and stuffed sole (Omaha Steaks) cooked in the copper pot with the steamer rack in the oven for 40 minutes. 
I put a dollop of Trader Joe's Tartar Sauce with it...  YUMMMMMMM!
