3-3 ~ Sami ~ Bubble & Squeak ~ White Tea ~ Chicago Justice ~ Cold Cuts


Good 34º foggy morning. What was weird in the middle of the night, I woke up, looked at the ceiling where my projection clock shows the time and outside temperature. Today being 3-3, and the time was 3:33 and the temperature was 33.3º !!!! WOW.
That gloomy fog hung around for a long time yesterday and stayed in the 30ºs til 11am and then warmed to 40º and by early afternoon we hit 55º. Windy and cool.....

When I get dressed in this kind of weather, first I put my pants and sweatshirt in the clothes dryer for 5 minutes.
Then putting them on all I can say is "Ahhhhhhh". So nice and warm!!!!

Yesterday was Sami's birthday and the family had dinner and birthday cake at home but Grandma Jean, Uncle Jimmy, and I all were on Face Time when Sami blew out the candles on her cake and we all sang Happy Birthday. Fun!!  Ahhh, modern technology!


I posted the recipe for cabbage fritters and it got a lot of drool going from a lot of people. Now, since this is "Corned Beef and Cabbage" month
I have another cabbage recipe for you...
 
Bubble and Squeak

The potatoes bubble and the cabbage squeaks while cooking. This classic has roots all over the United Kingdom. This is also a great side dish for corned beef for St. Paddy's Day. (BTW, Patty is an Irish girl's name and Paddy is the nickname for Patrick.)
Ingredients:
5 potatoes, peeled and diced
½ pound bacon, cut into small pieces
1 head cabbage, coarsely shredded
½ cup water
1 t. salt
1. Place the potatoes in a pot and add enough water to cover. Bring to boil over med heat and cook 5-7 minutes, or until tender. Drain and let sit in colander.
2. In the same pot cook the bacon over medium heat until crisp. Drain all but 2 T. of bacon drippings.
3. Return potatoes to the pot and add the cabbage, water, and salt. Cook over medium-high heat 8-10 minutes or until cabbage is tender.
Now the more traditional is using leftovers... mash the potatoes, fry the cabbage and bacon and any other leftover green veggies (peas for example) and mix them all together and fry them like little  pancakes.

I bought this tea at Trader Joe's.

It is supposed to be so good for you as it's full of antioxidants ... organic white tea leaves, organic hibiscus flowers, organic lemongrass, natural flavor and pomegranate extract, and organic citrus flavors.  It's good! When I fixed it I also put in a little pure lemon juice!

Later dinner was the quinoa/turkey meatballs rerun. Finished watching the third part of the Chicago trilogy (Chicago Fire & PD/Chicago Med/Chicago Justice). Chicago Justice is the newest addition to the Chicago shows. Will be on regularly.
